Ingredients
2 cups 2 Finely chopped Pineapple
1 cup 1 Dried Red plums
1 pc 1 Lemon sliced
2 tbsp 2 Lemon juice
2 tbsp 2 Extra Virgin Olive oil
1/4 cup 1/4 Cilantro or Coriander
Salt to taste
Directions
- Mix salt, lemon juice and olive oil. Whisk to combine.
- Toss chopped pineapple, dried red plums, cilantro or coriander and sliced lemon in a salad bowl.
- Pour the dressing over and toss gently to combine.
- Keep in the refrigerator for 1 hour.
