You can’t go wrong with this healthy pineapple salad recipe, it is full of goodness and tastes amazing. Get a fresh start this weekend with our easy healthy pineapple salad recipe and it's the perfect addition to your meal prep for the upcoming week.

Ingredients

  • 2 cups 2 Finely chopped Pineapple

  • 1 cup 1 Dried Red plums

  • 1 pc 1 Lemon sliced

  • 2 tbsp 2 Lemon juice

  • 2 tbsp 2 Extra Virgin Olive oil

  • 1/4 cup 1/4 Cilantro or Coriander

  • Salt to taste

Directions

  • Mix salt, lemon juice and olive oil. Whisk to combine. 
  • Toss chopped pineapple, dried red plums, cilantro or coriander and sliced lemon in a salad bowl.
  • Pour the dressing over and toss gently to combine. 
  • Keep in the refrigerator for 1 hour.
