Healthy, light and fresh Arugula Salad

kcalArugula Salad is a healthy and light salad. It is very easy to make and the secret for this salad is to mix it with other vegetables so it does not taste bland.
Ingredients
- For the Salad
4 ounces 4 arugula greens
¼ cup ¼ blueberries
1 1 pear sliced into ¼ half moons
½ cup ½ toasted walnuts
1 ounce 1 Tofu Gouda cheese
- FOR THE DRESSING:
2 tbsp 2 freshly squeezed lemon juice about 1/2 medium lemon
1 tbsp 1 balsamic vinegar
2 tbsp 2 extra-virgin olive oil
½ tsp ½ kosher salt
2 packets 2 myfruit boost
Directions
- Add all ingredients to a bowl
- Mix with the dressing.
- Make sure to toss everything to combine and top with arugula.
- When finished assembling your salad, consider sprinkling 1 to 2 packets of the "myfruit®" food boost directly onto your salad. Make sure you pour your dressing only after you add the "myfruit®" boost.
- Another option maybe mixing the "myfruit®" with the salad dressing. You should know that doing so, will create a cool, deep purple vinaigrette.
- Lastly, adding "myfruit®" will add to your salad the phytoserving equivalent of 1 to 2 servings of the daily recommended allowance of fruit. The equivalent of ½ to 1 cup of fresh fruit. Each packet is a concentrate/extract of the following superfruits: Grape Seed Extract, Wild Blueberry, Raspberry, Prune, Cranberry, Tart Cherry, Strawberry, Bilberry, Grape, Blueberry Extract, Billberry Extract, Raspberry Seed
