Healthy Quinoa Bowl w/ Turmeric

It's time to get your healthy eating habits back on track with a delicious, guilt-free dinner. This Quinoa bowl is sugar free, gluten free, and vegan! Healthy eating never tasted so good. Get energized with this delicious, easy, and healthy meal!

Ingredients

  • 1 cup 1 Quinoa

  • 2 pcs 2 Carrots  cut into thin strips/sticks

  • 1 pc 1 Red bell pepper, cut into thin strips

  • 1 pc 1 Red Cabbage thinly sliced

  • 2 pcs 2 Green Onions, cut into rings

  • 1 cup 1  roughly chopped Cilantro

  • 1 cup 1 frozen Edamame

  • 1/2 cup 1/2 Cucumber, cut into cubes

  • 1/4 cup 1/4 Roasted Peanuts

  • For The Sauce:
  • 1 cup 1 natural, unsweetened peanut butter

  • 1 pc 1 Lime juice

  • 1 tsp 1 Maple syrup

  • 2 tsps 2 Soy sauce

  • Red Pepper flakes

  • 1 clove 1 Garlic minced

  • 3-4 tbsps 3-4 Water

  • 1/2 tsp 1/2 Sriracha (Optional)

  • 1 tsp 1 Sesame oil

Directions

  • Cook the quinoa following the instructions on the package or in the Instant Pot.
  • While the quinoa cooks, chop up the carrots, bell pepper, and red cabbage into thin strips and the cucumber into cubes. 
  • Cook the edamame in boiling water as directed on the package.
  • Mix together all of the peanut sauce ingredients in a small bowl.
  • Serve cooked quinoa with vegetables, peanut sauce, and chopped peanuts.
