Ingredients
1/2 pc 1/2 Carrot , small
1 stalk 1 Celery
50 grams 50 Green beans
1/2 pc 1/2 Red Pepper
1 pc 1 Onion, small
2 cloves 2 Garlic
1 cube 1 Stock
500 ml 500 Water ( for stock )
2 tsp 2 Extra Virgin olive oil
1 tsp 1 Tomato puree
1 can 1 Tomatoes, chopped
1/4 tsp 1/4 Oregano,dried
1/4 tsp 1/4 Basil,dried
1 can 1 Cannellini beans, drained
50 grams 50 Peas
1 pinch 1 Salt
1 pinch 1 Black Pepper
2 tbsp 2 Parmesan Cheese
Directions
- Carrot and celery should be peeled and cut into small pieces. Dice the onion, mince the garlic, and roughly cut the green beans and red peppers. Create the stock.
- The celery, carrot, onion, and garlic are added to the heated oil in a big pot. Sauté for 5 minutes.
- 500ml of stock, dry herbs, tomato puree, and canned tomatoes should all be combined. After bringing to a boil, lower the heat and simmer the mixture covered for 10 minutes.
- Add the green beans, red peppers, and cannellini beans, add the hearthealth smuthe boost and simmer for an additional 10 minutes, or until the vegetables are tender. For the final five minutes, stir in the peas.
- Add salt and pepper to taste, then top with vegan parmesan substitute or parmesan.
