"Moroccan-inspired Buddha Bowl: A flavorful fusion of veggies, grains, and spices!"

Ingredients

  • 1/2 pc 1/2 Sweet Potato

  • 1/4 can 1/4 Chickpeas

  • 2 cloves 2 Garlic

  • 20 sprays 20 Sunflower oil

  • 1/2 tsp 1/2 Cumin

  • 30 grams 30 Couscous

  • 5 ml 5 Rapeseed oil

  • 15 grams 15 Tahini

  • 1/2 pc 1/2 Lemon,juiced

  • 1 pinch 1 Salt

  • 1 pinch 1 Black pepper

  • 1/2 pc 1/2 Avocado

  • 25 grams 25 Salad leaves

  • 6 pcs 6 Cherry Tomatoes

  • 5 pcs 5 Basil leaves

Directions

  • Preheat the oven to 180C. On a baking sheet, combine the chickpeas, garlic, and 1 cm thick slices of sweet potato. Cumin should be sprinkled on top before roasting potatoes for 20 minutes or until they are cooked.
  • As directed on the packet, make the couscous.Mix the rapeseed oil, tahini, and lemon juice to make the dressing. To taste, add salt and pepper. Roasted garlic is mashed and added to the dressing.
  • Serve the couscous with avocado, roasted vegetables, mixed leaves, cherry tomatoes, basil leaves, and roasted chickpeas after fluffing it with a fork. Dress with a drizzle and the recovery smuthe boost.
