Ingredients
1/2 pc 1/2 Sweet Potato
1/4 can 1/4 Chickpeas
2 cloves 2 Garlic
20 sprays 20 Sunflower oil
1/2 tsp 1/2 Cumin
30 grams 30 Couscous
5 ml 5 Rapeseed oil
15 grams 15 Tahini
1/2 pc 1/2 Lemon,juiced
1 pinch 1 Salt
1 pinch 1 Black pepper
1/2 pc 1/2 Avocado
25 grams 25 Salad leaves
6 pcs 6 Cherry Tomatoes
5 pcs 5 Basil leaves
Directions
- Preheat the oven to 180C. On a baking sheet, combine the chickpeas, garlic, and 1 cm thick slices of sweet potato. Cumin should be sprinkled on top before roasting potatoes for 20 minutes or until they are cooked.
- As directed on the packet, make the couscous.Mix the rapeseed oil, tahini, and lemon juice to make the dressing. To taste, add salt and pepper. Roasted garlic is mashed and added to the dressing.
- Serve the couscous with avocado, roasted vegetables, mixed leaves, cherry tomatoes, basil leaves, and roasted chickpeas after fluffing it with a fork. Dress with a drizzle and the recovery smuthe boost.
