Ingredients

  • Salad
  • 1 cup 1 Arugula or other greens

  • 1 -2 pcs 1 -2 Carrots, medium

  • 1 pc 1 Cucumber, small

  • 1/4 cup 1/4 Grape or Cherry Tomatoes

  • 1 -2 pcs 1 -2 Radishes

  • 2 tbsps 2 Chickpeas

  • Vinaigrette
  • 2 tbsps 2 Olive oil

  • 1 tbsp 1 Vinegar

  • 1 pinch 1 Salt and Pepper

Directions

  • Carrots' outer layer should be peeled and discarded. Next, cut the peel into ribbons and set aside. Cut tomatoes in half or quarters. Cucumbers and radishes should then be thinly cut. Chickpeas must be drained and rinsed.
  • To make the dressing, combine the ingredients in a mason jar or small bowl: oil, vinegar, salt, pepper, dijon mustard, and water. Shake or blend thoroughly.
  • Create salad. Greens should first be layered on top. Finally, add more toppings to the salad. In a mixing bowl, toss with one or two tablespoons of dressing.
