kcalCauliflower has become a popular substitute for high-carb foods like rice, pizza crusts, potatoes, flour, and sandwich thins. Also, there’s research that suggests that consuming cauliflower on a daily basis may result in weight loss. One last relevant detail about cauliflower: one cooked cup (approximately 155 grams) delivers 3 grams of fiber, protein and is rich in vitamins C and K.
Now, let’s get to this extraordinarily simple vegan dish. There are only three basic ingredients:

1 full 1 cauliflower
2 full 2 lemons
1 Bunch 1 Arugula
salt ( to taste)

Directions
- When preparing this salad, preheat the oven at 425° F.
- Toss the cauliflower and grill for 15 to 20 minutes or until the edges are browned.
- Slice, squeeze, and cover the cauliflower with the lemon top with Arugula. For a spicy kick and a hint of green, sprinkle some arugula on top and turmeric - see below.
