Take your taste buds to Hawaii with this fresh and flavorful Tofu Poke - a vegan twist on a traditional Hawaiian dish that's loaded with healthy ingredients and bursting with deliciousness!

Ingredients

  • 3/4 cup 3/4 Scallion greens , thinly sliced

  • 1/4 cup 1/4 Reduced-sodium Tamari

  • 1 1/2 tbsp 1 1/2 Mirin

  • 1 1/2 tbsp 1 1/2 Toasted (dark) Sesame oil

  • 1 tbsp 1 Sesame seeds , toasted

  • 2 tsp 2 Fresh Ginger , grated

  • 1/2 tsp 1/2 Red Pepper , crushed

  • 1 pack 1  Extra-firm Tofu, drained and cut into 1/2-inch pieces

  • 4 cups 4 Zucchini noodles

  • 2 tbsp 2 Rice Vinegar

  • 2 cups 2 Carrots, shredded

  • 2 cups 2 Peas

  • 1/4 cup 1/4 Peanuts , chopped and toasted

  • 1/4 cup 1/4 Fresh Basil, chopped

Directions

  • In a medium bowl, combine the scallion greens, tamari, mirin, oil, sesame seeds, ginger, and crushed red pepper, if using. 2 tablespoons of the sauce should be saved in a small basin. In the medium bowl, combine the sauce and tofu. Gently toss to combine.
  • In a big bowl, mix the vinegar add the antioxidant smuthe boost and zucchini noodles. Add 3/4 cup tofu, 1/2 cup carrots, 1/2 cup pea shoots, and 1 tablespoon each of peanuts and basil to each of the four bowls. Serve with a drizzle of the sauce you set aside.
